Gum Arabic is a natural, gelatinous exudate derived from the branches of the Arabic tree or closely related acacia species. It solidifies naturally when exposed to air and appears as a translucent block ranging in color from light white to pale yellowish-brown. With a molecular weight between 220,000 and 300,000, it is odorless, tasteless, and flammable. When mixed with water, it gradually forms an acidic, viscous solution, though its viscosity decreases over time. It has a solubility of approximately 50% (W/N) in water and is insoluble in ethanol.
Recognized as the world’s oldest and most widely known natural gum, Gum Arabic’s earliest recorded use dates back over 5,000 years to ancient Egypt. Over time, its applications have expanded significantly, particularly in the food industry as a valuable additive.
Gum Arabic is a safe and non-toxic food additive with no regulated maximum usage limit.
