Gum Arabic Overview
Gum From Acacia Tree is a natural gum obtained from the branches of the Acacia (Arabic) tree. This translucent block, ranging from pale white to light yellow-brown, has a molecular weight of 220,000–300,000. It’s odorless, tasteless, and flammable. When dissolved in water, it becomes acidic and viscous; over time viscosity drops, achieving about 50% solubility (wet weight), but it remains insoluble in ethanol. Traced back over 5,000 years to ancient Egypt, it's the world’s oldest known natural gum and is still extensively used—especially as a food additive.
It’s a safe food ingredient with no regulatory maximum; known in Europe as “desert gold,” it’s widely used in beverages, bakery, dairy, and health food products. It functions as a stabilizer, emulsifier, and increases dietary fiber.
