Gum Arabic is a gelatinous secretion derived from the branches of the Arabic tree or closely related acacia species, naturally solidifying when exposed to air. It appears as translucent blocks ranging from light white to pale yellowish-brown, with a molecular weight between 220,000 and 300,000. It is odorless, tasteless, and flammable. When dissolved in water, it gradually forms an acidic viscous solution; over time, the viscosity decreases. Its solubility in water is about 50% (weight/weight), and it is insoluble in ethanol. As the oldest and most renowned natural gum worldwide, its earliest known use dates back approximately 5,000 years to ancient Egypt. Over time, its applications have expanded widely, especially as a food additive.
