Gum Arabic is a natural, gelatinous exudate obtained from the branches of the Arabic tree or closely related acacia species. It solidifies upon exposure to air, forming translucent blocks that range in color from light white to pale yellowish-brown. With a molecular weight between 220,000 and 300,000, it is odorless, tasteless, and flammable. When dissolved in water, it gradually forms an acidic, viscous solution; however, its viscosity decreases over time. Its solubility in water is approximately 50% (WN), and it remains insoluble in ethanol. Gum Arabic is regarded as the oldest and most widely recognized natural gum, with its use dating back over 5,000 years to ancient Egypt. Over time, its range of applications has expanded significantly, particularly in the field of food additives.
Gum Arabic is a safe, non-toxic food ingredient with no defined maximum usage limit. Often referred to as "desert gold" in Europe, it is extensively used in beverages, baked goods, dairy products, and health foods. It functions effectively as a stabilizer, emulsifier, and a source of dietary fiber.
