Acacia Senegal Gum is a gelatinous substance secreted from the branches of the Arabic tree or closely related acacia species, which naturally solidifies when exposed to air. It appears as a translucent block ranging in color from light white to pale yellowish-brown, with a molecular weight between 220,000 and 300,000. Odorless, tasteless, and flammable, it slowly dissolves in water to form an acidic, viscous solution. Over time, the viscosity decreases. It has a water solubility of approximately 50% (WN) and is insoluble in ethanol. Recognized as the oldest and most renowned natural gum globally, its earliest recorded use dates back over 5,000 years to ancient Egypt. Today, its applications have expanded widely, particularly in the food industry.
As a food additive, Acacia Senegal Gum is considered safe and non-toxic, with no specified maximum usage limit. Often referred to as "desert gold" in Europe, it is extensively used in beverages, baked goods, dairy products, health supplements, and more. It functions effectively as a stabilizer, emulsifier, and a source of dietary fiber.
